A Trip Through the Winemaking Heart of Baja California 12/4/2017

Once the XXVII International Cataract, Cornea and Refractive Surgery Symposium ended, all doctors and researchers who showed up were invited to travel through the winemaking wonders offered by the state of Baja California. The attendees were able to enjoy one of the most unique and characteristic events and touristic landscapes in Mexico: the wine fields in Valle de Guadalupe.

What makes the vineyards of Valle de Guadalupe so special is a combination of several factors such as serenity, a friendly environment, nice and enjoyable weather, a vast, green and splendorous landscape, and, of course, the best wines by the best brands that can be drank and tasted.

For the doctors and researchers, however, the trip started in the renowned Sabina restaurant, one of the culinary prides of Ensenada. Established in 1960 in a small cart (which still exists and still functions on 1st and Alvarado Street), this establishment has as a leader its creator, Mrs. Sabina Bandera. She has taken her restaurant to worldwide fame for the creation of her 13 gourmet salsas and has received awards such as Best Original Dish in LA Street Food Fest in 2011 and 1st place in sales and 3rd place in World Street Food Congress, which took place in Singapore in 2013. As expected, all the attendees, as well as any visitor and food lover, were delighted by the distinguished recipes in seafood that this unique, 100% Baja Californian restaurant offers.

After a good meal, a relaxing afternoon with wine was no problem. Our attendees visited the winery Vinos de Garza. Under the mantle of an establishment covered in leaves and flowers, one can enjoy one of the most beautiful views in the entire Valle. All of the restaurant’s exquisite snacks and wines give room so that one can watch the sunsets with the brightest and warmest colors and lights. The natural views also showed their trump cards, for the moon can rarely be seen as big and as bright as from this particular vineyard. “Look, the organizers even gave us this beautiful moon,” one of the attendees commented, saying aloud what everyone was thinking: that this kind of experiences are unparalleled and have to be experienced directly.

Once this visit was over, the attendees went over to Bodegas Magoni, one of the most spectacular wineries for its landscapes and environment. The attendees were able to enjoy a delicious tasting of cheese and meat snacks under the shade of one of the most singular attractions in the Valley: an oak tree with over 300 years of age. Robust, enormous and lush, this tree has been taken care of generation after generation as a main attraction of this winery where one can play and wonder of how one can combine the beauty of nature to its maximum splendor with human skill to give themselves the best experiences and delights.

Finally, dinner occurred in the rustic cabins of La Laja restaurant, where the warm and professional environment made a favorable comparison with its aged setting and the company that the attendees enjoyed with each other. The snacks and wine continue late into the night when the doctors and researchers were given one last unforgettable experience: Campera Hotel Burbuja. Here one can stay the night under this unique concept in North America where technology and nature find their most solemn balance. It is in these rooms shaped like bubbles where one can really appreciate what it is like to live among the grape crops and sleep in one of the most beautiful views of the planet under five million stars.

The most important thing, not only for the attendees of the symposium but for anyone, is the unique and calm environment offered by these singular locations. It is a perfect place to share an excellent time with friends and family, to establish relationships with coworkers and future partners and even to relax after arduous days of work, perfect for vacationing and with vast, in both distance and quantity, wineries to travel through, explore and experience firsthand.
